This PR changes install targets:

  • In medcat readme / docs
    • Removes specific target to always use latest
  • In medcat-v2-tutorials
    • To use v2.2 instead v2.1
  • In medcat-service
    • To use v2.2 instead v2.1
  • In medcat-demo
    • To use v2.2 instead v2.1

Currently the installation for the 2.0 beta release is simply:
```
pip install medcat~=2.0.0b
pip install medcat

I think the above lines need to change these days?

## Install using PIP (Requires Python 3.10+)
Installation instructions are to follow upon a release of this version on PyPI.
Though installation is likely to be simply `pip install "medcat>=2.0"` at that time.
Currently the installation for the 2.0 beta release is simply:

Yeah... I really need to figure out how to avoid having the main docs page NOT duplicate information on the README...
