Do market creators have to be wallets or can a PDA/program address be used?
Is there no way to have a wallet to pay for the txs cost but having the PDA sign the CPI?

Unfortunately PDA's cannot be market creators, this is a limitation with Anchor in that PDA's cannot pay for account creation
Adding a second signer to pay for creation is possible but we don't have that implemented right now, as it stands we only have 1 signer and we validate that payer = market_operator, so it's not possible to use a PDA signer
