build(deps): updated dependencies in examples

Following the v0.7.0 release this PR bumps the version of the @aws-lambda-powertools/* dependencies along with all the other dependencies used.

Thanks, at the moment integration tests don't cover examples though, so it should succeed regardless of these changes

It failed because of the Sampling Rate of Logger, merging anyway in light of the above.
