build(deps): bump broken Depdendabot deps

Description of your changes

As reported in this issue there are a number of dependencies declared in packages part of the npm workspaces that are not being bumped by Depdendabot.

This PR bumps these dependencies manually in an effort to keep the dependencies up to date and avoid having noise in the PRs.
