Publish nginxinc/nginx-unprivileged based image

The `swagger-editor` container has an image without root requirements, but `swagger-ui` does not.

@char0n has made this change already in https://github.com/swagger-api/swagger-editor/pull/3705/files and this should be quite easy to realize in `swagger-ui`.
