[BugFix] Fix 4-GPU RLHF tests

These require the recently added VLLM_ALLOW_INSECURE_SERIALIZATION env var to be set.

I enabled some extra tests to run. I'm not 100% sure but I don't think the remaining failing ones are related to the pickle thing.
